S’MORMON Ebelskivers

Commentary:

Ebelskivers are a Danish dessert and, since I have Danish blood, I had to experiment with them! The cookbook that inspired my thinking is Ebelskivers by Kevin Crafts. It features a variety of sweet and savory ebelskiver adaptations, including a recipe for s’mores. I wanted to avoid graham cracker crumbs, though, so I opted for the recipe above. They turned out tasty and fun, but need further experimentation.

S’MORTUNE Cookies

Fortune Cookie Flats
Marshmallow Creme
Cadbury Dairy Milk

Commentary:

This recipe came together serendipitously. I went to the store (Farmer Joe’s in Oakland, CA) looking for fortune cookies and next to the fortune cookies were these fortune cookie flats, which I had never seen before. My creative gears started spinning and I did a quick search on my phone of what brand of chocolate is popular in China. I found that Cadbury is in the top three, so I added a Cadbury Dairy Milk to my shopping cart and went home to experiment! Somewhere during the car trip home, I came up with the name “S’MORTUNE Cookie”

This recipe has a lot of potential. The fortune cookie flats are thin and crunchy, providing a nice texture in combination with the smooth choco-marshmallow center. Stay tuned for further developments.

Texas S’MORMON

Ingredients:

Homemade Ritz Crackers (recipe)
Peanut Butter
Half a Large Marshmallow

Commentary:

In many ways, this is what started the whole S’MORMON movement. When I was a young child, my mom would make these using Ritz Crackers — she got the recipe from someone else — and I always looked forward to them. Years later, when I was in graduate school in Texas I made them one evening for a few friends. As we ate them I realized how similar they were to S’MORES. Not really knowing what they were called and thinking of my surroundings I decided to dub them the “Texas S’MORE.”

The Texas S’MORMON is really just an artisan version of the Texas S’MORE, using homemade Ritz Crackers. Other than that, they are made the same way — fill a cookie sheet with them and place them in the oven on broil until they brown on the top. They taste heavenly, which people often confuse with Texas, so the name is fitting.

Recently, my brother reminded me that his name for Texas S’MORES, from way back, is “San Francisco Belly Buttons.” The reason why is far less interesting than the name, but, suffice it to say, I live in the Bay Area nowadays, so that name is also fitting.

Double Chocolate Chip S’MORMON

Chocolate Chocolate Chip Cookies
Marshmallow Creme

Commentary:

The easy way to make a S’MORMON is to just put marshmallow creme between whatever cookies your wife happens to be baking on any given night! These cookies feature Ghirardelli milk chocolate chips which add a luxuriant creaminess to the dark chocolate dough. These cookies would make pretty good S’MORMONS no matter what type of chips you use — white chocolate, semi-sweet, peanut butter, butterscotch, mint, etc. You’ll have to change the name of the S’MORMON to match the chip, though, but that’s the magic and flexibility of S’MORMONS. If you can think it, you can S’MORE it!

Traditional S’MORMON

Ingredients:

1. Homemade Graham Crackers (recipe)
2. Your choice of chocolate
3. Your choice of marshmallow

Commentary:

Really all that’s essential with this recipe is to make your own homemade graham crackers. There are several recipes online. I’m not completely sold on the recipe we used, but I also didn’t follow it exactly (they certainly didn’t take 25 minutes to bake, so keep your eye on them). When we made these S’MORMONS, we used marshmallow creme and a variety bag of Ghirardelli chocolate squares.

White Chocolate Snickerdoodle S’MORMON


Ingredients:

1. Snickerdoodles (recipe)
2. Lindt White Chocolate
3. Marshmallow Creme

Commentary:

This recipe features a mild, cinnamon-sugar flavor. Originally, I had tried a Ghirardelli Cinnamon Crunch Square, but I found its cinnamon flavor clashed with the cinnamon flavor in the Snickerdoodle. For a more dynamic flavor, experiment with other chocolate flavors!

Pumpkin Candy Corn S’MORMON

1. Pumpkin Cookies
2. Hershey’s Candy Corn Creme Bar
3. Marshmallow Creme

Commentary:

A unique and tasty October snack, assuming Hershey keeps making the Candy Corn Creme Bar… The Pumpkin Cookies featured in the above photo are a family favorite because they are soft, tasty, and simple to make. You only need two ingredients: a Spice Cake mix and a can of pureed pumpkin!

A variation on this S’MORMON can be made with a Candy Corn Peep that comes dipped in white chocolate. It looks a bit like Donald Trump hair. In that spirit, “Make Dessert Great Again with a S’MORMON!”
